Laid down on April 4th, 2014, and decanted on August 8th, 2025, Cask 160 represents over a decade of patience, precision, and intent. Distilled from 100% malted grains grown in Simcoe County, this single malt was matured slowly to develop depth, structure, and a bold, unapologetic character.
After 11 years in cask, the result is a whisky that leans heavily into rich oak influence while maintaining a layered complexity. On the nose, expect deep vanilla, toasted oak, and dark caramel, backed by dried orchard fruit, orange peel, and a subtle nuttiness. The palate delivers intensity—spice, leather, roasted malt, and burnt sugar—balanced by underlying notes of raisin, cocoa, and a lingering warmth that speaks to its age and strength.
This is whisky in its rawest form—unfiltered, uncut, and bottled at full cask strength.

At 75% ABV, this is not meant to be consumed neat straight from the bottle.
To properly experience Cask 160:
- Start by pouring a small amount (½ oz to 1 oz) into a glass
- Add clean, neutral water (preferably room temperature, non-chlorinated)
- Begin with a 1:1 ratio (equal parts whisky and water), bringing it closer to ~37–40% ABV
- Let it rest for 30–60 seconds to allow the whisky to open up
- Adjust to taste—add water gradually until the aromas and flavors become expressive rather than aggressive
Adding water isn’t optional here—it’s essential. At full strength, the alcohol will overpower the profile. Proper dilution unlocks the depth, softness, and complexity this whisky spent 11 years developing.
