Buck 8 – Straight Corn Whisky (8 Years Old)

Born from the heart of Simcoe County and crafted with uncompromising patience, Buck 8 is a true expression of Ontario grain and time. Made from 100% corn—grown in the fertile fields of Simcoe County—and a touch of malted barley for natural conversion, this whisky was milled, mashed, distilled, and aged entirely in Ontario. Rested for eight long years in ex–Wild Turkey bourbon barrels, it delivers a deep golden hue and a refined sweetness that only age and real wood can impart.

On the nose, Buck 8 opens with rich caramel, toasted oak, and hints of vanilla and roasted corn. The palate is warm and layered—smooth corn sweetness balanced by gentle spice and subtle bourbon undertones. The finish lingers long and mellow, evoking the same slow craftsmanship that defines every drop.

This is Ontario whisky, done the right way—honest, bold, and proudly local. Grain: ~99 % Corn, ~1 % Malted Barley (for natural conversion; no artificial enzymes)

Age: 8 Years (fully matured in Ontario’s climate)

Barrel / ABV: Ex-Wild Turkey Bourbon Casks | 59.5 % ABV (Cask Strength)


The Aroma:

Sweet corn, toasted oak, vanilla bean, and honeyed caramel, lifted by light coconut and a whiff of orange peel. Subtle spice and char trace back to the Wild Turkey barrels.


The Palate:

Rich and viscous, opening with cornbread, toffee, and crème brûlée sweetness. Mid-palate brings roasted nuts, soft leather, and a touch of peppery rye spice from the cask. Despite its strength, it drinks closer to the low-50s—rounded, buttery, and remarkably smooth.


The Finish:

Long, warm, and gently drying. Layers of brown sugar, vanilla, toasted coconut, and oak linger with a faint echo of tobacco and spice.

Single-Origin Corn: 100 % corn grown in Simcoe, Ontario—capturing local terroir rarely showcased in Canadian whisky.

Natural Fermentation: No commercial enzymes; a touch of malted barley drives full conversion.

Wild Turkey Casks: Aged entirely in genuine ex-Wild Turkey barrels, imparting deep caramel, vanilla, and spice that mirror the classic Kentucky bourbon DNA.
