Made from locally sourced 100% Ontario rye grain. Mashed, fermented and distilled by hand in small batches in a copper pot still, then matured in ex-bourbon barrels on site. Bottled exclusively as a single cask offering with no chill filtering and no artificial colouring added.
Nose:
The grain. Huge amount of grain. Grassiness and freshly harvested grain with floral notes, some sweetness and of course the rye spiciness.
Palate:
Full mouth feel. Starts sweet with toffee and caramel then the wonderful pepper spiciness with hints of ginger and cloves.
Finish:
Long and sweet with lingering pepper. “Hot pepper meets honey”.
